they should see my homebrew. I just rack the wort a few times, no fining or filtering, and I carbonate with a secondary fermentation in the bottle. So there's a nice layer of yeast carcasses on the bottom of the bottles :9

My favorite local Hefe Weissen in Germany was just like that - with a cloudy layer of yeast on the bottom. That beer was amazing, though sadly it gave me headaches like nothing else.

The gasthaus was right next to scenic farms so we also got to enjoy the aroma of fresh fertilizer being sprayed on the fields and they don't use fancy chemicals but old-fashioned poop.

I did a raspberry wheat a few years ago, using fresh fruit that my sister had gathered. Only I probably should have filtered, because it was full of raspberry floaties and foamed like a son of a bitch whenever I opened a bottle.

It was still good though, so fuck it.

They're one of the few that I'm aware of. Most have stopped using it in favor of man-made fining agents. (I worked in a brewery for a decade and was kept abreast of all the trends of the trade.) Stouts made in Ireland and the U.K. use it, and that's about it as far as major brands.

Right on. I, too, am hyper-sensitive of isinglass use. Obviously on the craft end, you just need to know your brewery and ask them. Micro-breweries tend to be run by pretty nice people that are super good about being upfront about their ingredients.
